Catfish is versatile and can be cooked in various ways, depending on your preference. Here are some popular methods:  

### 1. **Fried Catfish**  
- **Ingredients**: Catfish fillets, cornmeal, flour, spices (paprika, garlic powder, cayenne, salt, and pepper), and oil.  
- **Instructions**:  
  1. Rinse the fillets and pat them dry.  
  2. Mix cornmeal, flour, and spices in a bowl.  
  3. Coat the fillets in the mixture.  
  4. Heat oil in a skillet and fry the fillets until golden and crispy.  

### 2. **Grilled Catfish**  
- **Ingredients**: Catfish fillets, olive oil, lemon juice, garlic, and herbs (thyme, parsley, or dill).  
- **Instructions**:  
  1. Marinate the fillets in olive oil, lemon juice, garlic, and herbs for 30 minutes.  
  2. Preheat the grill and lightly oil the grates.  
  3. Grill the fillets for 4–5 minutes per side or until cooked through.  

### 3. **Blackened Catfish**  
- **Ingredients**: Catfish fillets, butter, Cajun or blackening seasoning.  
- **Instructions**:  
  1. Coat the fillets with melted butter and seasoning.  
  2. Heat a cast-iron skillet until very hot.  
  3. Sear the fillets for 2–3 minutes per side until darkened and cooked.  

### 4. **Catfish Stew**  
- **Ingredients**: Catfish chunks, onions, tomatoes, peppers, broth, and spices.  
- **Instructions**:  
  1. Sauté onions and peppers in a pot.  
  2. Add diced tomatoes, broth, and spices.  
  3. Simmer and add catfish chunks, cooking until tender.
